Let's Eat!

Hey, hey!  Another week of prepping, cooking and eating ahead.

Well we made it past the second full week of school and today we're rockin' a holiday. All I can say is so far SO good!

I noticed last week that my daughter became interested in eating breakfast again.  She wanted a yogurt and a Nutri Grain bar.  To be completely honest with you she's easing into wanting mom to cook large, elaborate breakfasts (a.k.a. homemade waffles) by the end of the month.  Just watch.

The last Sam's trip I ventured out on I picked up a multi pack of Nutri Grain bars which included a box of the apple cinnamon, blueberry, and strawberry.  Also worth noting the box had a code in it for a free book of my daughter's choosing.  Scholastic and Kellogg's teamed up to do this wonderful program.  We ordered a book by Dave Pilkey, you know the Captain Underpants genius.

I'm telling you all this to inform you of a great program and to say, it is OK to feed your kid a Nutri Grain bar and yogurt for breakfast. (Especially when it comes with a free book.)

Snacks

Right now is a great time to buy:

Apples
Grapes
Pears

And you know what else?  Those are fabulous snacks.  If you leave the peel on they are even more fabulous because a lot of the nutrition is in the skin/peel.

Pair these with a protein so they stick around longer on the tummies.  I suggest nut butter and cheese sticks and Greek yogurt!

Dinners
(Wait, did she skip lunch?)

I mean this is why you read this post, right? Riiiiiiight.

Since I'm working more this week I'm relying on my old trust friend Mr. Crock Pot. I asked my kids last week what they wanted for dinner this week and this is what I heard:

"SPAKETTI!"
"LASAGNA!"

I was baffled are my children blonde Italians?

I cannot do spaghetti and lasagna in the same week.  I just cannot do that to my intestines.  So instead I'm making this....
Leftovers for lunch

We are going to fill the soup night with a crock pot LASAGNA soup!  Kids are happy because they get soup (their favorite) and one of their requests (lasagna).  Then it will go into the lunchbox the next day as not a soup but a lasagna.  How fabulous is that?  Totally.

(Ahhh she didn't skip the lunch grouping...you're comprehending that now.)

Our other meals of the week include:
Baked Parmesan Garlic Chicken
Fun meal:  Sloppy Joe's

Here's why I skipped lunch....

A lot of the main courses this week will carry over to lunches this week!  I love versatility in meals.  This will save a lot of money and time.  In case you haven't noticed your grocery bill tends to rise during the school year.

A Year Later

Today marks the one year anniversary of a life event that would totally reshape my life and my husband’s life.  It isn’t an anniversary that you look forward to with baited breath.  You don’t really plan a celebration in its honor.  If anything this is the event that turns your tummy upside down and you may even try to avoid.

September 6, 2014 was a pretty, late summer day.  We had spent the day with the kids and had a night away planned.  Our sitter was coming over with her little sister.  The hubs and I were off to Greensboro for dinner.  No bells, no whistles, nothing out of the ordinary.

We had a great time while we were out.  Mind you we just had dinner and did some window shopping.  While we were on our way home I received a text from our sitter that there was a really bad storm and our daughter was freaking out.  I told her we were on our way home.

When we got home I paid the sitter and thanked her.  I checked on our kids, the two year old fast asleep in his crib and our daughter happy but drowsy from lots of play time with her friend R.
I tried to keep my cool as I quickly packed their bags.

See, when I was walking in our home I stopped and noticed the shadow off the porch did not look like it normally did as it floated into our yard. Instead of a spray of light and dark from the porch…it was just predominantly dark.  I peeked over and my husband just said, “Don’t look.  Go pack.”

Adrenaline pumping and the feelings of euphoria were quickly coming in to play.  This couldn’t be real but this was very real.  I have to move, just keep moving, be positive, and don’t scare the kids.

I stepped outside to call my mom and let her know we needed her help.  Part of me knew when she picked up the phone I would crumble.  Isn’t that what we, kid with good mamas, do?  We’re all tough and ten feet tall and bullet proof but when you hear your mom’s voice it is over.  You just let it go and melt.

I couldn’t speak.  She came over and got the kids.

We would spend the next 17 weeks living with her and her husband in the bedroom of my teenage years.

September 6th will forever be the date that I learned that God does hear our prayers.  It would be the date in my life where I would realize that when we put our focus and heart and soul on others He will respond.

Every night prior to that event I said a very simple prayer over my kids.  This is it….

“Dear God, please keep my children healthy and safe all their days. In Jesus’ name, amen.”

It isn’t poetic or deep.  It is a simple prayer I have prayed for a long time over my children.  It is every mama’s basic hope for her children.  It is the basis for every day - keep them healthy (no broken bones, illness whether it be strep or something even more drastic) keep them safe (in school, in the car, on their devices, when they’re with friends, at youth group, or on the court/mat/field).

On 9.6.2014 my prayers were answered.

There were four kids in my house that night.

While they played and laughed and ate and vegged out in front of a television the foundation/basement walls of that house were rushed by an immense amount of water and collapsed sending the house into a teetering state of disruption.  There were wires, water, mud, and muck and the weight of a house sitting on a wall and a corner.

If you are a builder or engineer you would have seen our house and said (like the engineer who came out) – “You should be thanking your lucky stars your kids are alive.”

Logically, scientifically, and structurally the house should have fell on down and or a fire should have started between the frayed and cut wires and the water.

Neither happened.

You may call it luck or a good day.  I call it grace.

Grace covered so much last fall.

I felt grace in day three when the insurance company said they wouldn’t cover this damage.
When I gave up the fear and stood alone behind my house staring at the trees, I felt grace.  I learned a long time ago to give up whatever is worrying you to God.  Verbally tell Him to take it and make with it what He will. I did that and he calmed me.

When the timeline for moving the house (yes moving it) and repairing it was off kilter I felt grace.
It held my tongue and my fist.  It kept me busy with other items that needed my attention.

I felt grace in the hands and feet of all the friends who helped at the house, with the kids, by raising money to help us, who prayed for us with no stopping, who made meals and loved on us when we felt like we were at the end of our ropes.

I felt grace in the ability to keep some things as stable as possible for the kids with Saturday breakfasts at IHOP, pumpkin patches, trick or treating, birthday dinners, our annual Christmas tree trip on Thanksgiving, and so much more.

Grace carried us so that our focus wasn’t really worrying but making it through.

On December 20, 2014 we moved back into our home.  We had a makeshift fake tree last year for Christmas and a sense of peace even though things had been so awkward for months.  We had a new view on what really matters in this life – it isn’t anything you can buy.  No car, house, dress, purse, book, vacation can ever be something of true importance.  It is the people and memories you make with those people.  It is the ability to be an item of grace in someone else’s life when the walls are crashing down.

We could have lost a lot more on that night a year ago but we were spared. Though it was the hardest personal event of my life to deal with (other than the unexpected loss of my grandmother in 2005) it was an event that was necessary to teach me how much my God cherishes us and how intricate we are to each other’s lives, every single day, to be grace in action.

Raise 'Em Up

She was so tiny! Now she is EIGHT YEARS OLD!  My High Five for this Friday is my wonderful little girl in honor of her birthday (today!)

1.  She LOVES books.

I instilled the reading gene pretty early in this kid.  Before she was ever out of my warm and cozy womb she was being read to.  I read children's books, novels, and news articles out loud while she was still baking.  After she was born I read to her all the time and even when she would wake up at 3AM fussy.  She started reading around three years old and has been a strong reader ever since.  I am a mama and I am so proud of this.  I wish reading came easy for all children and it really upsets me when a child or adult struggles to read.  Maybe my little girl will work to change that as she gets older!

She recommends these books for your kids:  The Puppy Palace Series, Bridge to Terabitha, Junie B. Jones series, Judy Moody books, and all books by Dave Pilkey.

2.  She LOVES some Barbies.

I guess she gets this honest because I, too, was a Barbie Girl....in a Barbie World.  However, she only likes the ones that have straight arms and not bent arms.  Get it right people there is a difference.  She likes them because you can collect them and she also likes to create clothing for them....trust me on this I've seen what she can do with a pair of scissors and a Barbie dress.

Her favorite Barbie with her birthday was her Birthday Month Barbie.

3.  That girl is all about rule following.

I have a child that colors within all lines.  I respect that and love that and hope that she will always be a good kid.  So maybe in ten years I'll look back on this blog post and thing, "What went wrong?"  but I pray not because one thing we want for our kids is for them to have a good head on their shoulders.

4.  She is a rock star.

This past year she's been into music more than ever.  Yes, she is a Taylor Swift wannabe.  She rocks out to Swift here at the house and in the car (no, I never join in, never ever ever...bahahaha).  Now she's into writing her own songs and her influence is pretty clear...Ms. Swift.
She's a rock star in some other ways too...she helps out with her brother (eventhough they argue like they are closer in age).  She is a lover and wants to stand up for the kids who are quiet and get bullied.  She has a big fat heart and it makes her a pretty cool person to know.

5.  She is the best thing ever.

If her brother ever reads this I hope he doesn't slam his computer down at this point.  My daughter changed my life in ways only a little girl can.  She was the first born and that role comes with some pretty cool traits (just look at her mom, also a first born <wink>).  She's taught me how to be a better contributor to this planet and how to slow my roll.  She's made me see the good when I think stuff is rotten stinky.  She's been my sunshine in a thunderstorm.  I was blessed by being chosen to be her mom and I know my husband feels the same way about his role as her dad.  I look forward to every day with her because she (just like her brother) are the chambers of my heart running around in this big little world.

Random Thoughts on a Thursday

Seniors are the best, most fun group.  I really enjoy working with them.  Note:  As in 12th graders not old people.

About old people, be nice to them.  Today I witnessed a very rude NCDMV representative rip apart an elderly gentleman.  He was very harsh and condemning of him.  The worst part was the rep did all this in front of a room of waiting people.  You know getting older is tough and being close to 90 years old is a whole new bag of difficult.  Have some respect.

Just because you wear a uniform doesn't make you God.

If you have a high school junior or senior who want to attend a four year college then you need to go straight to The Common Application right this second and get them on the application bandwagon.  This site makes it SO INCREDIBLY EASY!

I switched from my vanilla coffee back to standard run of the mill coffee and it is odd.

I have no desire for anything pumpkin spice at this point in the fall.  Bahahaha that makes me giggle all you fall freaks and your pumpkins on your porch and fall flags waving in the wind.  Disclaimer:  I may have two pumpkins under an oak tree in my backyard.

Two weeks in a row my kids have/will be enjoying grandparent time.  This is weird but good!  I appreciate some me time!

I have this goal to turn the AC off and not turn the heat on for at least 4 weeks.  I want to see just how low I can get my power bill.  I find these challenges totally fun.  Dork alert.

Admitting, I had a dream the other night that was so real and so scary.  The dream was: I was pregnant (terrible, horrible, bad nightmare) and it was so real I woke up and went to the bathroom, lifted my shirt and verified I was not harboring a basketball belly.  I rarely dream but when I do it is so vivid and real it makes me vomit.

I love weeks where I don't have to cook but for maybe two or three nights with one night consisting of SOUP.

If you need Christmas, Hannukah, or birthday wrapping paper or  I'm your girl.  Seriously, selling it for the next three weeks and it will be in an upcoming blog post!

I really need you to join my Alzheimer's Walk Team.  I have NO ONE on it.  Really it shocks me because I thought more people were wanting to help find a cure in any way possible.  If you think about it joining me to walk and pledging $20 isn't that difficult.  Or just making a donation if you're too far away or not able to walk is pretty awesome.  Get ready to see more promotion of this cause on the blog (again).

Why the crap did that plan fly like twenty feet over my house and scare the bajeezus out of me?

Two books on my read this fall list are:  The Hyacinth Girls & A Fall of Marigolds - anyone read these?

I have got to do some shopping today and it isn't budgeted til like tomorrow.  That's life.

Last week I did that bad movie post and I loved the feed back I received.  I need to critique some more movies I cannot make it past twenty minutes of huh?

My brother turned 20 today.  That's kind of weird.

We need to smile more.
Slightly addicted to mobile patrol app...

This Weekend in North Carolina

Happy September!  We're in a transition period in North Carolina for festivals and celebrations.  I know many of you have fun plans for the unofficial end to summer this weekend (a la Labor day) but if you don't....

Pinehurst - Taste of the New South  Food, food, food.  That should draw in you in enough.  Pinehurst is going to tickle your taste buds with new takes on old Southern favorites, great wines, beers, and even some tailgate goodies.

Hickory - American Legion Fair  Anyone here excited about fair season?  I love the State Fair in Raleigh and I would love to visit this fair that isn't too far away from the world o' brownie.   This marks the 102nd year of the Hickory American Legion Fair.  This year's theme is Supporting our Farms.

Jonesville - Labor Day Weekend Flea Market  In case you weren't aware flea markets and yard sales and Labor Day really fit together in North Carolina & Virginia. This weekend you can head over to Jonesville and fill your trunk with treasures and then partake in their fall festival.

Little Switzerland - Emerald Village Rockfest  I bet you re read the name of that town twice, at least.  Yep there's a town called Little Switzerland in NC.  They are known for their gem mines.  This weekend is all about the rocks baby.  Learn some mining skills, go on some rocky adventures, and have a blast with your family at this event.

Franklin - Steven Curtis Chapman in concert  When I think about Contemporary Christian Music Pioneers I think Amy Grant, Michael W. Smith and this dude - Steven Curtis Chapman.  He'll be performing this weekend at the Smoky Mountain Center for the Performing Arts.  Check their schedule because they have some great acts coming to perform this season including:  90's country sensation Travis Tritt, country singer Josh Turner, and motivational speaker and author Lysa Tyerkeurst.

August Goals Revisited

I'm expecting an epic fail as I write this post....

My goals for August were:

1.  Plan the birthday parties.  My son's birthday is August 24th and my daughter's is September 4th.  I always try to do one party for both.  This year I'm changing it around a bit.  I think.
Did this!  Birthday party was this past weekend.
2.  Find some computer classes to take this fall.  I feel like my skills need to be brushed up.
Took on a few more activities than normal.  I hope to catch an Excel class soon.
3.  Read two books.
Yes, I did this!  I read Four Wives and The Absolutely True Diary of a Part Time Indian.
4.  Get at least one date night.
Did not happen.  Should have but didn't.
5.  Have a shark free beach trip.
Score!  We did have a great, shark free, trip.  Even though that one dork made everyone get out of the water because imaginary aircraft saw sharks.
6.  Enjoy the river (continue to...)
Those days are ended.  Tis normal.  I'll shut my mouth now.
7.  See if it is possible to actually make plans and carry them out with my BFF.
Yes, it was!!!!  We had a fun Friday together.  8.  Three more new recipes this month.
I think I made one.  Hmmm....what was it?
9. 48 miles of pavement pounding this month.
Fit bit said I did 26 miles last week.  I would say combined for the month I got semi close!
10.  Make an eye doctor appointment and a physical appointment.
I made appointments and had to rearrange the calendar.  Shooting for these in early September.

I am not making long term goals for the month.  I'm sticking to my Monday, May I goals from this point on.  :)

Do you have goals for September?

Tasty Tuesday

I love a main course that can stretch for a few days and morph from one dish to another.  This week we're having the tried and true buffalo chicken sandwiches via the crock pot and then on Tuesday it magically becomes chicken enchiladas.

Many people take meatloaf and have it the traditional way one day and as a sandwich the next.  I have seen the same done with pork chops.

I'm wondering today what is your most versatile meal to make?  What is your favorite multi-day go-to slash CIA agent food that can transform from one dish to another in the course of a couple to a few nights?

We all need input on this one. I hope you will share with me :)

***

Saturday morning pancakes are as American as apple pie on Labor Day.  I'm on a mission this September and October to make a different variation of pancake for my kids each Saturday morning.  This past weekend we had banana pancakes.  Normally I don't like anything banana but a banana.  I do enjoy mashing them up in my pancake batter though.

What is your favorite type of pancake to make?

***

Next week is the unofficial season change for most bloggers.  I'm saving my "fall" foods posts for post Labor Day as well.  I am ready to share stews, chilies, soups, and all things pumpkin and apple with you.

If you are ready for all things pumpkin now then head to your local Dunkin Donuts.  They reintroduced pumpkin everything to their menu yesterday.

Alrighty, I threw some questions your way, now toss some answers back lovelies!
