June 30th

For a girl who loves summer, this is the one day of the summer that is filled with raw, often surpressed emotion.

Today marks eleven years since I lost my beloved Mammaw.

I didn't get a chance to say goodbye to her or give her a last kiss on the cheek.  Instead, I spent a morning in a blur rushing up Highway 64 to get to her home.  I kept breaking down in tears as I drove and I met a wonderful NC State Trooper who gave a me a hug and told me get home safe.

I didn't get a chance to have those cherished moments of sitting in yard chairs, side by side, talking about whatever came to mind, one more time. Instead, I stood at a house I knew all too well feeling like a stranger and at the same time a lost little girl.  I couldn't wrap my mind around the fact she was no longer there.  My heart knew she would just appear but she never did and for the first time the true weight of loss was felt in my heart.

Her loss impacted me in a way that I cannot quite describe and I pray to God I never experience again.

It was abrupt.  That is merciful.

It was out of the blue.  That was an act of grace.

It was a blessing and a curse.

When we think of death we say silent prayers that it will come swiftly and in our sleep so that we feel no pain and that we aren't a burden to any loved one.

We do not want to die slowly, painfully, losing our abilities and cognizance.

Unfortunately, I'm watching my remaining grandmother die a slow and paralyzing death at the grip of Alzheimer's Disease.  It hardens my heart and then shatters it to a million pieces to see a once well put together and graceful woman turn into a shell of a human being with the mind of a toddler.

It makes me think back to those silent prayers - take me swiftly, in my sleep, so I am not a burden.

Life is full of learning experiences that fit fragmented pieces of puzzles together intricately.  This experience of watching one grandmother slowly fall into death's arms verses another who was swiftly without disease retire from this earth has shown me the mercies of God are immense and His process for taking each one of us has it's own logic.  We do no see that logic for years sometimes but when we do see His way in clear form we often find His love in it.

Though today I will do things with my children that I enjoyed doing with her my heart's affliction of her being gone from this life before weddings she should have attended, men she should have met who would take the role of grandsons-in-law, babies she should have rocked at 1:00 each afternoon in the rocking chair in front of Days of Our Lives.

But then grace will remind me...she was taken mercifully - quickly, painlessly, and into the arms of the angels without losing her abilities, capacities, and without worrying over becoming someone's burden and worry.  That same grace allowed my remaining grandmother to meet my husband, attend my wedding, hold both my babies, and have her when I needed a grandmother most as an adult.

God gives us seasons with important people.  I am full of thanks for 23.75 years with my Mammaw just as I am so glad for 30 years of good memories with my Mom-o.  Don't question the mercy and grace of the Lord.  He has his ways and they are filled with beauty.  It just takes us time to see the magnificence of His grace.

Top Summer Essentials for my NC Summers!

We are well into ninety degree heat here in North Carolina and it spurned this topic today on the blog!  When you live in the South you have to deal with heat and humidity every single day in June, July, and August.  I am a weirdo who doesn't complain about it because I honestly love it all.

Today I felt like I should share what I keep on me at all times during the North Carolina Summers I'm so accustomed to.

We'll look to my pool bag for the first of this grouping!  As you know I am at the pool nearly every day of the summer so it should be packed with only the best of the best for a random girl like me.

*Sunscreen*



Oh my goodness has this stuff got a bad rap this year or what?  I know there is a mad dash to get all natural sunscreen but I'm moving at a turtle's pace to do it.  Call me old fashioned but I still use the cream and for the kids I still buy level fifty.

Since I'm fair skinned I coat myself in thirty and my face gets a heaping dose of the kids' fifty.  My favorite will always be Hawaiian Tropic - the smell!!!

*Lemon Water*



I always have a Tervis of lemon water with me.  You have to stay hydrated when you're the pool referee!

*Magazines*



I think we hoard magazines for the summer!  My mom gets Southern Living, BHG, and one other so after she finishes hers I take them out to the pool.  I get Real Simple and can read it over and over again.  My husband takes his GQ, Field and Stream, and Outdoor Life to browse in the shade.

*A good book*



Easy summer reads are a must for the pool or beach and I think you will concur on that one.  I cannot wait to get my hands on Mary Kay Andrews' newest release!  By the way when I say a good book I mean a real tangible book not an e-reader or phone or tablet.  Keep the electronic stuff inside and get a real book!

*Hair ties*



Long hair don't care!  I throw my hair back when I get too hot and then dive in the pool!  I think we should buy stock in Goody considering how many hair ties I go through in a summer.  I also love to sport a bandana as a headband at the pool.  Walmart has adorable bandanas in various patterns for a buck.

In the kitchen...

Some days all lunch calls for is watermelon, peaches, or a tomato and green leaf lettuce wrap!  I like to take full advantage of all the local gardeners and farmer's bounty this time of year.  It is cheap and healthy eating at it's richest.

You knew this.  I keep three rums around:  dark, clear, and banana.  Mix it with a splash of cranberry juice and you're good to go.  Plus, the first sip takes you to tropical destination even if you are an hour from the Appalachains and three from the beach!

A lot of time in the water can lead to some unwanted medical issues, ladies.  Bathing suits are not breathable, water can be irritating, drink your cranberry juice to keep UTI's a bay!  This never happened to me until well...this year.  UGH!

I love having my nails painted and summer is the best time for fun and bright polish!  I love to stock up on cheap bottles (a la ninety-nine cents) and keep my shades ever changing.  The heat activated color changing polishes can be fun this time of year too!

You will find me in an over sized tank and my 9 year old, decaying, denim shorts that are literally coming apart.  I cannot fathom throwing them out!  They are too comfy and probably too big but too good to let go of!  I don't do summer trends I just live in my staples of comfort!  Let's face it...I'm normally sporting a bathing suit so ya know!

Nothing screams summer to me than good ole shagging music.  OK maybe I need to define that word for you because it isn't Austin Powers's idea of shagging but rather the Carolina dance style that is defined by beach music and easy steps and twirls.  I grew up on oldies and you cannot get a safer music for your kids to listen to and to make you smile.

Yeah I aspire to be her.

Favorite Summer Salads


I am so excited to link up with the stunning Shelley and classy Kate today with their Spiel the Beans series.  Twice a month they host a themed link up and this week it is Favorite Summer Salads.

In case you weren't aware...I eat a lot of salads.  Here are the salads that have stolen my heart and inches away from my waistline!

Chick Fil A Grilled Market Salad Fresh Made - make at home, mixed greens, chicken, red & green apple, strawberries, blueberries, mixed nuts, berry balsamic dressing:

Number one is an on-the-go salad and comes straight from Chicfila!  The classic, grilled Market Salad is my go to meal at my favorite chicken spot.  This salad is fresh and so good with their juicy grilled chicken, fresh fruit, and crisp lettuce.  My go to dressing is the Avocado Ranch which is low in carbs and sugar!

New Spicy Southwest Salad Added to Chick-fil-A Menu Nationwide #chickfila:

Number two is also from Chicfila (I promise I am not from Georgia nor am I related to the CFA CEO!  But if I were...) this is the Southwest Chicken Salad and it is ahhhh-mazing!  There is a nice little heat that comes from this salad which separates it from Market Salad.  Plus, to make it all Southwest you have the addition of Mexican Corn, black beans, tortilla strips, and the seasoning that caters to your Tex-Mex-Food-Love!  I also have the avocado dressing with this salad.


McDonald's has something good going with their Bacon Chicken Ranch Salad.  When I had my first one I was in total shock at how delicious the salad was.  I was expecting limp lettuce and a weird color tomato but I got crisp and fresh.  When I order this salad I get the Newman's Own Light Balsamic Vinagrette Dressing with it.  

Classic Cobb Salad for lunch. Grandma would order this and shrimp cocktail everywhere we went in Laguna.:

I am a sucker for a Cobb Salad.  A bed of lettuce and then all the meat (traditionally grilled chicken and bacon; sometimes steak!) and all the vegetables (tomatoes, cucumbers, now-days avocado, sometimes raw, fresh corn, green bell peppers if you are me) and finally all the additional protein (boiled eggs)...it is seriously a sugar free girl's heaven.  There is no set recipe for the perfect Cobb so you can create it however you wish.  To make it a cobb make sure you put everything in rows on a bed of lettuce.  And yes - it is a Southern thing.


I haven't had any of this amazing deliciousness since I gave up sugar and carbs.  This is one of my most favorite Southern foods - Southern Broccoli Salad.  It's sweet but tangy and goes so good with just about anything.  My most favorite broccoli salad can be found at Sixty-Six Pizzeria in Winston-Salem (shout out to home!).  They also rock the most amazing salad bar!

Another salad I love locally is in Historic Downtown Mocksville at Restaurant 101 - Their Buffalo Chicken Salad (grilled with ranch on the side) is pretty fabulous!  The produce is always super fresh and the chicken is juicy with a good kick to it.


But my most favorite local salad...that can never be eat, ever....goes to Milner Brother's  The Brad.
For a girl who isn't a fan of NC BBQ or fried chicken this dish has stolen my heart and stomach and taste buds and held them all hostage until I go back for more.


I just realized....I eat a lot of salad!  Loved sharing these with you today and I hope you'll be inspired the next time you're grabbing fast food or visiting a local favorite around the area!

What's Up Wednesday! June Edition



This week we're eating...
Tacos!!!  It has been about two weeks since I last made them so I believe it is time to whip up a batch.  My daughter's favorite food is tacos and or enchiladas so I'm thinking next week I'll make those too.  Also, this week we'll be having some super yummy THM drummies.  I love the lemon ones that we had last week but this week I'll probably make a more Tex Mex crock pot recipe of them!  Be sure to check out my Tuesday Recipe posts for low/no carb and low/no sugar recipes! Here's a classic recipe for you to keep around in your fridge and here's one that is a true favorite around our home!

Sorry for the picture over load here!  OK maybe not sorry!  Last week my son found a recordable book (Christmas none the less) and opened it up.  As soon as he did I heard the voice of my daughter from when she was about four years old reading.  Her voice was so incredibly tiny and sweet.  Of course that got me thinking about when she was tiny and sweet - before she became almost nine and full of sass and attitude!  Don't get me wrong she's not a terrible kid but she is my first, a girl, and almost nine....yep she's a mixed bag right now!  It is true that you blink and they grow up so for all of you with tiny little girls - hold on tight and try to not blink so quickly!  

What we've been up to
Summer camp was two weeks long and it wrapped up last week.
We had two weeks of Vacation Bible School and that has also wrapped up.
So now we are taking advantage of our local libary's Summer Reading Program and all the events they are offering up!  We're also spending enormous amounts of time at the pool.

I am having a small yard sale this weekend.  Honestly, I'm not putting too much effort into it.  A few tables and hopefully a rack or two for the clothing to go up on.  I'll make some signs this week...or put the kids on that job!  I dread it because..well I'm not sure!  I just do!  If you're in my area on Saturday between 7 and 2 then stop by our garage...we will clothing, shoes, housewares, kid's stuff, and mechanic stuff!  If you're having a large yard sale or garage sale this summer please do yourself a favor and go see my sweet friend Andrea's post on Garage Sale 101

What I'm working on
Does keeping my sanity count?  I'm hoping to get some crafting done but as for actually working on anything in June - I have not.

What I'm excited about


Three things, friends! 
The first is our upcoming beach weekend!!!  Woo hoo!  My mom invited us down for a long weekend.  I'm so excited and ready to go...I can smell the salt air and feel the sand and listen, can you hear the waves?!?!
The second is my Walmart Summer Beauty Box!  My sweet friend Emily got her's last week and it sounds like she got a fabulous box for summer travel!  I hope I get that lucky too.
The third is that I'm getting a surprise from my beautiful friend Andrea over at Living On Cloud Nine.  She sent me an email saying she found something that reminded her of me and it should be coming this week.  I just adore Andrea - she's so much fun to blog with and a fabulous uplifting lady. I look forward to connecting with her at least four days a week when we are reading one another's posts!

What I'm watching/reading

RHOC - Episode one did not lure me in very well.  It also inspired a blog post last week about Real Life.  It was one of my top read posts ever!
Odd Mom Out - My favorite comedy!  I'm so glad this show is back!  This year they add Drew Barrymore, Blythe Danner, and more to the cast!
RHONY - Dorinda that's all I can say.  I'm so confused on her - she's so up and down.
RHONJ - It's baaaaaaack!  (As I try to say that in a Jersey accent! Eeek!)
OITNB - I watched the first episode of this season last week.  Piper is so gangsta - with an a on the end.  HA!  Crazy eyes seems to have a changed a bit, anyone else notice that?  The "gardening" organically scenes had me so grossed out!  And you?
Bloodline - I swear getting through this is like pulling teeth.  I fall asleep watching it and I feel so bored with it but I keep trying to finish the season.

All We Ever Wanted Was Everything:

Reading this...it hasn't pulled me in yet.  I'm to the part where the mom is taking crystal meth.  Yeah, I'm not kidding.  You would think it would get interesting by that part but I'm so removed from it I'm like hmmm....

What I'm listening to
After two weeks of nothing but KidsBop....
Is it bad to say I'm not really listening to anything?  Everything sounds the same!  I try to put on oldies at the pool.  I'm just not feeling any music right now.

What I'm Doing This Weekend
Yard sale as mentioned above.  I know it is July 4th weekend but at this point we have no plans.  Normally, we swim at my mom's pool and go to my dad's river place.  Who knows what this year wil bring - yep not much on planning ahead!  Maybe we'll actually find some fireworks this year...my son would love that!  I know I will be finding some rum.

Tasty Tuesday: Sugar Free/Carb Free Holiday Tips!



Well hello there!  Welcome to my regularly scheduled Tasty Tuesday post.  If you are looking for recipes then you should visit my Recipe Tuesday post which is all about July 4th food and drink ideas this week!

If you're here for another one of Amanda's Fun Nutrition Lessons then take a seat and pull out a pencil and doodle as you read.  Isn't that supposed to be effective?

I received a couple emails this month from people who were starting their sugar free and carb free journey.  It was delightful to get to answer some of their questions and help them navigate the waters of protein and fat without the heavy weight of carbs and sugar.  Their emails were the catalyst for this post.

The most popular question was this....

Since I'm going sugar and carb free does that mean I should not eat any carbs or sugar again?  What about (celebrations) I go to?

Ummm....no.

When I detoxed to get on this path I cut sugar (all but naturally occurring) and carbs from my diet for the first two weeks.  The third week I brought in some complex carbs but no more than 10 a day.  I stuck with that for another couple of weeks.

strawberry angel food cake trifle; angel food cake mix, tub of cool whip, instant vanilla pudding mix, strawberry yogurt (24oz), lemon juice (2 tbsp) and fresh strawberries, blueberries and blackberries.:
Make a trifle with angel food cake or sugar free vanilla cake mix, sugar free cool whip, and fresh berries!  Easier on the waistline, skin, and energy!

Celebrations can be a tempting time and also a time to allow yourself a bit of lenience.  Having said that you need to make sure you look before you dive into the table of sweetness and bad carb central.  Here's what I suggest you take into account before you fix a plate of everything you've been walking away from:

1.  Is it something you really love or is it just something sweet.

Sometimes we eat to eat and that is what gets us in trouble.  If you're favorite cake on earth is carrot cake and you aren't a huge fan of vanilla then why are you picking up a slice of the vanilla cake?  Because it is there?  Because you want to be nice?  Those are bad answers.  You don't eat something you're not a huge fan of because it is in front of you.  You don't eat to be nice.  You compliment to be nice.

2.  Can you make the necessary adjustments to your diet if you eat that sweet?

When I take in an item that is on my no-no list then I know I must make adjustments to my diet for the day.  For me a brownie is my go to baked good.  I realize if I eat a brownie for breakfast (it happens sometimes) that means I am carbed and sugared out for the day.  That means I'm eating protein and healthy fat the rest of the day with zero grams of carbs and sugar coming in.  Can you do that?  Yes, you can.

3.  Disciplined?

Anything worth having takes work.  If I was giving you tips on starvation then the second you ate a piece of cake you would then eat two brownies and six pieces of pie and within a few days gain back water weight, fat, and that horrible feeling you had before you took sugar and carbs out of your daily routine.  Ask yourself if you are really disciplined enough at this stage in the game to eat that treat(s).  Be honest with yourself.  If you are disciplined enough and you really want to feel better and look better then trust yourself to splurge - smart!  If it is a baked good - go small on the portion.  If it is alcohol then try your best to make a low carb choice.



Should I reintroduce carbohydrates and sugar into my diet?  When?

Give yourself 15-30 days to stay sugar and carb free.  Start with ten and see how easy it is and how many changes occur in your body then go on to 15 days, 20 days, 25 days, and 30 days.  At thirty take a really good look at what you have accomplished:

*What does your skin look like?  Clearer, smaller pores, decreased number of lines or fine wrinkles?
*How much more energy do you have?
*How are your clothes fitting you?
*Can you focus better?
*Is sleeping easier?

All of those should be answered in a positive response (though after the first three to four days you will probably be swearing quite a bit and hating me and life in general.)  Eliminating the sugar and carbs makes us healthier and naturally prettier people!  It may even make you look a bit younger and slimmer!  SCORE!

What does your carb and sugar intake look like two months in?

My carb in take after the total detox looks like this:

On the mornings that have me off to clean client's homes I now have a bit of carbs to start my day off.  I have found that about 10 grams of carbohydrates help me get through the tasks of scrubbing, mopping, dusting, vacuuming, wiping, disinfecting, etc without feeling totally drained.  I'll go into more detail about this when I do my post about exercise and nutrition keys in August.

When I treat myself this summer with some naughty sugar and carbs it is a 4:00 allowance a couple days a week of a classic Coca-Cola!  (Small, which is about 12 oz.)  Because a soda is packed with nasty sugar and loads of carbs I know I have to steer clear of carbs all through the day.  Luckily, this is easy because I keep lots of lean meats and fresh vegetables (non starch) around for my meals and snacks!

On the weekends I have a couple beers - my choice is Michelob Ultra because of the low carbs.  There are other low carb options out there but Mich Ultra is the most widely sold/available.

I do not have these foods and drinks every day.  Remember: I allow myself 10 carbs a day but on the days I have 10 carbs in the morning I have no more that day.  When I have a soda (two days a week) those are my only bad sugar and total carbs I take in that day unless I sneak in a complex carb or two.

And just so you know after my sugar detox I moved to supporting the new lifestyle with Trim Healthy Mama recipes and nutrition tips.  This means I have low/no sugar and low/no carbs still!  But if I need to pull from a carb I do....a complex one.

We have a huge barbecue for Independence Day.  What should I do?

Party, obviously.

OK maybe a more serious response is needed.  Easy things to do at the barbecue can include:

*Eat your burger or hot dog without a bun.
*Try to steer clear of ketchup.
*Chips, baked beans, potato salad, and pasta salad are not your friends.  Instead, if you're hosting the barbecue make a couple of better side choices for yourself and anyone else who wants to cut down on the carbs - a great option is deviled eggs! Remember non starchy vegetables on the grill too!
*Sugar free dessert options are real and are good.

And being that it is a big holiday for festive drinks and summer shandy remember that the carbs you eliminate from your plate aren't being added to the carbs you sip.  The same goes for sugar!  Just remember the carbs and calories in alcohol are insane and much higher than the plate of food you're probably engulfing after being on the water all day.  (FYI:  The average margarita has 500 calories in it!)  Drink smart.

Recipe Tuesday: Independence Day Eats (Pin 5!)

Good morning!  I hope you guys are doing ever so well today.  We're into day two of both kids being home and so far so good.  Today we're going to work on getting some good ole Americana decor together for Independence Day.

I really do not have any posts planned with a 4th of July theme.  I was also not prepared for this post this week with a recipe I made and was ready to share with you.  And if you know me you know that translates to turning this post into a Pinterest 5 post!

Annnnddddd the first one is a total score!!!  I cannot wait for our Publix to open up :)  Is it sad when you get excited about a new grocery store?  Probably?  Yeah, I thought so.  This recipe comes from Publix and it looks simple perfect for the 4th of July.  Sure, the kids and men may turn their noses up at the main fare but c'mon girls tell me this doesn't look divine? I pinned this one (and all on this page) to Stuff You Saw On The Blog (Summer) and here's the direct link to the recipe via Publix.




Handmade in the Heartland had this next pin up and immediately I thought about my kids...and my dog!  These are super cute and pretty much mess free.  If you're having a cook out for the 4th the last thing you want to do is clean up your kids five bajillion times from messy food. 




OK back on the smart eating track...I love this idea!  Frozen yogurt bites with strawberries and blueberries.  A cool and economical snack for a hot summer celebration; sounds good to me!  This website can be a bit slow so when you click over there from Pinterest be prepared!



This makes my mouth water every so badly!  Shrimp, guac, yes!!!  Step away from the burgers and hotdogs and how about making a table of small eats with a healthy twist this year.  I really enjoy the plethora of recipes from Joy Filled Eats so when you got over you need to browse for a few minutes!



Lastly - a bit of rum for the tum.  Warning this sounds very smooth and very easy to drink so be careful!

Southern Charm Season 3 - Thoughts from Whitney & Amanda



Any other Southern Charm fans out there?  As you know I'm a huge fan.  Even though it is in the other Carolina I love watching the show and not hearing the accents you probably hear!  HA!

Tonight the reunion will air for this insane season that is now a wrap.  In honor of it I wanted to post up a fun email discussion that Whitney at Polka Dotty Place and I had about this season of our beloved show.

Whitney emailed me some great questions!  My answers are in purple (I'm not sure why the shades of purple change) and Whitney's are in pink.


What did you think of the dinner party Thomas threw?  


Honestly, I thought he was back on drugs.  He has a history of cocaine addiction and his whole demeanor screamed out drugs if you ask me!  I think his personality has shifted a lot this entire season so knowing his hx I was like - oh look he's on drugs again!

I agree that it seems as though Thomas is on drugs.  He's acting crazy!!

What will come of Landon and Shep?  


Ewwww!  I cannot stand Landon!  I really hope it doesn't work out - and yes that is mean - but I just do not see them sticking.  Of course since I say this they will probably get married and have fifteen children.  

I used to like Landon, but her charm has worn off for me.  It seems as though Patricia is out to help her so we'll see how that plays out.  I think Shep has made it pretty clear that he's not interested.

I (Amanda)  would like to note that they did not try to establish a romantic relationship and I was giggling in my rum over that one.  Whew!  However, I did not condone him asking her friend to the Founder's Ball.  That was a low move and made me see him as a ridiculous young man and not a late thirties man at all!


How sweet was Shep when he was having lunch with his mom?  


He is really close with his mom.  Through all the seasons they are always in scenes together hanging out so I wasn't surprised.  She is his money so of course he loves her hehe.

Maybe Shep's mom will play matchmaker and find someone for him :)  I'd imagine he got a few fan girls.  

Probably because he's handsome too.  

Side note from Amanda:  He's also a playboy and how many of us can say we went through that phase when the bad apple was the most appetizing?  Yep.

What in the world is Craig going to do for his profession? 


Reality television LOL!

Craig and Cam definitely make great reality stars.  I'm doubting he'll ever take and pass the bar.

Will Cam ever come around to having a baby?

Not sure about that one.  Cam is an actress and knows the ropes of reality television so you never know if you are getting real Cam or fake Cam.  I do think she's a little too in love with herself to have a mini but at the same time I think she would make a great mom.  Her mother seems like a lot of fun and a good model so I think Cam could pull it off - if she thinks the social life and cameras would like it!

I'm guessing Cam will have a baby since her husband really wants one.  But she'll still work and stay far away from any playdates with Kathryn ðŸ˜Š

How long before Kathryn is pregnant again?  


Girl....Kathryn is gross but Kathryn is deceivingly smart.  In SC if you have a child out of wedlock the mom has total rights to the child and the father has none.  Since Kathryn has had 1 (2???) by Thomas she has a level of control over him (as long as he wants to do the right thing and be a dad) and his finances.  I think her pregnancies were a move to secure herself financially which makes me want to vomit.  I also find that to be very strange because Ms. Calhoun comes from old money - and LOTS of it.  So if she's ovulating right now and she feels the need for some new Prada she's probably on her way to number three!

I can't imagine Kathryn ever calming down enough to be a sane person.  She and Thomas make quite the crazy duo.  I feel sorry for their kids and am still questioning if their newest addition is his!
