Tasty Tuesday

So this is week three of my sharing the Hungry Girl recipes that I'm trying.  Another week to share a delicious freakin' dish with you....this can be a side for lunch or dinner, a main course, or throw it in an omelette.  Anyway you eat it you'll be going dayum girl!

Spinach, Mushroom, & Mozzarella Supreme

You need:
Visit Hungry Girl!
32oz of frozen/chopped spinach (thawed and dried)
1 1/2 cups of canned sliced mushrooms (drained)
3 wedges of The Laughing Cow cheese (pick any light flavor you wish) at room temperature
1 cup diced onion
1/2 cup shredded fat free mozzarella cheese
3/4 teaspoon of garlic powder

Preheat the oven to 350 degrees

In a pan (sprayed with your favorite cooking spray NOT BUTTER) cook your onion over high heat.  It generally takes the onion four minutes to cook.  Then slide the onion to the side (like take it off the stove ok?)

Pat your spinach with paper towels to make sure the water is out of it.

In a mixing bowl, combine spinach, cheese wedges, onion, and garlic powder (you can add salt and pepper if you wish).  Mix it up good ya hear?

Spray a medium cooking dish with cooking spray.  Spread 1/2 the spinach mixture on the bottom of the dish.  Layer half the mushrooms on top.  Alternate the two until you have your remaining spinach as the top layer.  Sprinkle your mozzarella cheese on top.

Bake it for about 30 minutes.

De-freakin'-licious!!!

Just a tad over 100 calories and as far as WW points go it is 2 on Points Plus!
